the healthy life

we finally made it into the month of may but it's still pounding snow here.  we've had about 2 weeks of no nonsense accumulation.  in honor of bringing on my own spring while everyone else is on their mud season vacation, I have been making health conscious spring inspired dishes.  

whole wheat shells tossed with zucchini, cherry tomatoes, yellow squash, mozzarella & grilled chicken sprinkled with parm

whole wheat french toast topped with fresh strawberries, honey-infused greek yogurt & a side of turkey bacon
